DIARIO DELLA VENDEMMIA HARVEST DIARY 2019 34 35 Il DEDICATO A WALTER, gioiello della corona dei vini di Poggio al Tesoro, viene prodotto da una selezione “estrema” di Cabernet Franc: uve accuratamente selezionate da viti vecchie di 25 anni piantate lungo la Via Bolgherese. Dopo la raccolta in piccole cassette per mantenerne l’integrità dei grappoli, al ricevimento in cantina, dopo la diraspatura, passano attraverso un’attenta selezione sul nastro di cernita. Ogni acino qui deve essere perfetto! È un vino che stupisce per la grande ricchezza e la sua struttura imponente ma armonica. Si presta benissimo a piatti di carne con sapori decisi e succosi, esalta in maniera raffinata anche selezioni di formaggi di lunga stagionatura. DEDICATO A WALTER, the jewel in the crown of wines by Poggio al Tesoro, is produced via an extremely rigorous selectionofCabernetFranc: thegrapesarecarefullyselected from 25-year-old vines planted along Via Bolgherese. After collecting them in small crates to maintain the integrity of the bunches, upon reception in the cellar, and after destemming, they go through further careful selection on the sorting belt. Every single berry here has to be perfect! This wine is stunning for its great richness and its imposing but harmonious structure. It pairs extremely well with meat dishes with strong and succulent flavours and also brings out the best in platters of extra-matured cheeses. Quest’anno, in particolare, siamo molto curiosi di fare i primi assaggi ufficiali dell’annata 2019. A partire da questa vendemmia, infatti, la fermentazione di alcune varietà si svolgerà in legno, nei nuovi tini troncoconici appena acquistati. Le uve, provenienti dai vigneti Via Bolgherese e Chiesina San Giuseppe, sono perfettamente sane e in grado di sostenere lunghe macerazioni. La qualità del vino comincia dalle sapienti pratiche agronomiche adottate nei vigneti, dalla scelta precisa dei tempi di raccolta, fino alla selezione delle uve pre-vinificazione attraverso il nastro di cernita, per concludersi con fermentazioni lente e precise, senza arresti fermentativi. Anche la scelta dei lieviti, il fabbisogno di azoto ed il monitoraggio durante la fermentazione alcolica sono decisioni cruciali da prendere con precisione ed accuratezza. This year, in particular, we are really curious to undertake the first official tastings of vintage 2019. Starting from this harvest, in fact, fermentation of some varieties will take place in wood, in newly-purchased truncated cone vats. The grapes, which come from the Via Bolgherese and Chiesina San Giuseppe vineyards, are perfectly healthy and able to withstand long macerations. The quality of the wine starts with expert agronomic practices adopted in the vineyards, from the precise choice of harvest times, up to the selection of the pre-vinification grapes passing through the sorting belt, to slow and precise fermentations without stoppages. The selection of yeasts, the nitrogen requirements and monitoring during alcoholic fermentation are also crucial decisions to be taken carefully and accurately.
