DIARIO DELLA VENDEMMIA HARVEST DIARY 2019 22 23 Syrah, Merlot e Cabernet Sauvignon sono tre varietà che richiedono tre vendemmie differenziate. A le Sondraie la raccolta delle uve per il Mediterra è iniziata il 4 settembre ed è terminata il 26 settembre. L’annata promette molto bene perché le uve sono maturate con temperature ideali e non come quelle che ci hanno sorpreso con la calura estiva del 2017. Questo ci ha consentito di fermentare le uve del Syrah con una piccola percentuale di raspi, con la finalità di apportare una nota tannica al Mediterra 2019. Il lavoro di Lorenzo in cantina è davvero certosino: dopo la vinificazione e le fermentazioni separate, le masse dovranno essere assemblate nel momento più opportuno e nelle giuste percentuali. Vogliamo esaltare, nel caso del Mediterra, la personalità del Syrah con le sue tipiche note speziate e di frutti rossi. Franco e Lorenzo negli ultimi giorni hanno effettuato, con un’attenzione quasi manicale, campionature ed analisi su ogni appezzamento per verificare il grado di maturità delle uve. In the last few days, Franco and Lorenzo have carried out sampling and analysis on each plot with almost maniacal attention to check the degree of maturity of the grapes.
