DIARIO DELLA VENDEMMIA HARVEST DIARY 2019 46 47 Vigneto | Vineyard Le Sondraie Vitigno | Grapevine • Petit Manseng Grande espressione di Petit Manseng, il Teos presenta intensi sentori di miele, richiama note di mandorle e, in parte, il cioccolato fondente, con il quale si sposa perfettamente. Caldo ed avvolgente, non è mai stucchevole. I grappoli, perfettamente integri, vengono sottoposti ad un appassimento in cassette per circa un mese e mezzo. Quest’anno abbiamo fatto anche una piccola prova, lasciando surmaturare le uve in vigna: il riparo dal sole concesso da un apparato fogliare importante, lasciato appositamente sopra i grappoli, così come la ventilazione costante, hanno creato le condizioni ottimali per poter svolgere, con questa varietà, una vendemmia tardiva. La piccola quantità di bottiglie che andremo a produrre ci permetterà di ampliare le nostre conoscenze, studiando ogni piccolo dettaglio della produzione con un’attenzione che potremmo definire “sartoriale”. A fine expression of Petit Manseng, Teos reveals intense notes of honey and is reminiscent of almonds and, in part, dark chocolate, with which it pairs perfectly. The small number of bottles we are going to produce will allow us to expand our knowledge, scrutinizing every little detail of the production with a razor-sharp eye. Nella stagione primaverile usiamo prodotti di copertura, completamente naturali e di contatto, che agiscono, cioè, dove vengono distribuiti. Monitoriamo la crescita delle viti controllando la porzione di germoglio che man mano resta scoperta, per capire se è necessario fare ulteriori trattamenti. Il controllo della crescita ci serve anche per capire se il vigneto sta progredendo in maniera omogenea. Ogni anno immagazziniamo un numero considerevole di dati che ci permettono poi di valutare l’evoluzione delle diverse annate, componendo, di anno in anno, precise statistiche di crescita. Abbiamo degli ospiti! I ragazzi che, nel 2018, hanno partecipato alla prima edizione del Boot Camp Allegrini, sono qui da noi in visita. Si tratta di 6 ragazzi provenienti da altrettanti paesi del mondo. Il premio che Marilisa, attraverso un contest, ha voluto dare ai vincitori è stato l’ALLEGRINI ESTATES GRAND TOUR, focalizzandoli quest’anno sulle tenute toscane di Allegrini.
