La maturazione dell’acino riguarda la crescita della bacca, la variazione della sua consistenza meccanica, che da rigida e fragile diventa elastica e morbida. L’accumulo di zuccheri semplici, la diminuzione dell’acidità e l’incremento del pH. Si tratta di un’analisi fondamentale che, se ben svolta, permette di raggiungere grandi risultati grazie all’equilibrio delle sostanze contenute negli acini.
