Poggio al Tesoro Diario della Vendemmia / Harvest Diary / 2020 1 Dovremo aspettare ancora un po’ per cantare vittoria ma sta di fatto che questa vendemmia 2020 è e sarà una raccolta che definire “straordinaria” è eufemistico, a prescindere dalla produzione che verrà. Questa pandemia ci aveva paventato vendemmie verdi, distillazione di migliaia di ettolitri di vino, aveva messo alle strette i produttori che si sono visti in difficoltà nel reperire manodopera e nel gestire spazi in cantina, così come costi non preventivati. Invece... nonostante tutto e tutti e nella consapevole incertezza di ciò che verrà, il coraggio e la dedizione verso il lavoro e nei confronti della propria terra stanno portando i vignaioli italiani a raccogliere il frutto di fatica e sacrificio con la stessa forza e speranza di sempre! Abbiamo stretto i denti, ed ora vediamo il lato più positivo di questo 2020: quello dell’Italia che non si arrende e che trasforma il dolore in energia e le incognite in esperienza. Poggio al Tesoro e le sue persone sono, a buon diritto, tra i migliori interpreti di questi sentimenti. 2020, UN’ANNATA DA RICORDARE Abbiamo stretto i denti, ed ora vediamo il lato più positivo di questo 2020: quello dell’Italia che non si arrende e che trasforma il dolore in energia e le incognite in esperienza. We have gritted our teeth, and now we can see the most positive side of 2020: a nation, Italy, that do not give up and transforms pain into energy and unknowns into experience. 2020, A VINTAGE TO REMEMBER MARILISA ALLEGRINI We will have to wait a little longer before we can celebrate but the fact is that harvest 2020 is, and will be, one that we could only euphemistically refer to as ‘extraordinary’, regardless of the wines it will yield. This pandemic had made us fearful of bleak harvests, or having to distil hundreds of thousands of litres of wine. It had penalised producers who struggled to find manpower and to manage the space available in their cellars, as well as unforeseen costs. Yet... despite everything, and with the on-going awareness of the uncertainties to come, the courage and the dedication of Italian winemakers to their work and to the land are enabling them to reap the fruits of their efforts and their sacrifices with the same determination and hope as ever! We have gritted our teeth, and now we can see the most positive side of 2020: a nation, Italy, that do not give up and transforms pain into energy and unknowns into experience. Poggio al Tesoro and its people are, and with good reason, amongst the best exponents of these convictions.

Poggio al Tesoro Poggio al Tesoro Diario della Vendemmia / Harvest Diary / 2020 Diario della Vendemmia / Harvest Diary / 2020 2 3 Il 2020 sarà senza dubbio un anno che ricorderemo a lungo, ha cambiato radicalmente il modo di stare insieme tra persone, per cui anche Poggio al Tesoro, azienda fatta di persone (e che persone!) si è dovuta riorganizzare con nuovi regolamenti interni, che hanno permesso di svolgere con gli stessi standard qualitativi tutte le operazioni, sia in campagna che in cantina, in totale sicurezza. L’andamento stagionale a Bolgheri è stato abbastanza bilanciato, a parte qualche notte fredda a fine marzo dove la temperatura è scesa sotto lo zero, il resto della primavera è stata bella e soleggiata, qualche pioggia nei momenti giusti ha garantito un corretto andamento vegetativo con fioritura e allegagione omogenei. Il mese di giugno ha visto davvero poche giornate di pioggia, salvo alcune precipitazioni durante la prima settimana che hanno evitato alle viti lo stress idrico, da scongiurare in questa fase di maturazione. Verso fine agosto le temperature estive hanno iniziato gradualmente ad abbassarsi a seguito di alcune precipitazioni che hanno reso possibile il proseguimento della vendemmia. Settembre soleggiato, caldo con ampie escursioni termiche, tipiche della zona, ci ha accompagnato per il resto della vendemmia. 2020 is undoubtedly a year we will remember for a very long time. It has radically changed the way people spend time together, and so also Poggio al Tesoro, a company made up of people (and what amazing people!) has had to reorganize, with new internal regulations that have enabled all its operations to be carried out at the same standards of quality, both in the countryside and in the winery, in completely safe conditions. The seasonal development of the vintage in Bolgheri was quite well-balanced, apart from a few cold nights at the end of March when the temperature dropped below zero. The rest of spring was beautiful and sunny with some rain at the right times, thereby guaranteeing correct vegetative development with uniform flowering and fruit set. The month of June saw very few rainy days, except for some rainfall during the first week which protected the vines from drought stress, something that must be avoided during the ripening phase. Towards the end of August, the summer temperatures gradually began to drop following some rainfall, making it possible to continue the harvest. A sunny, warm September with marked differences in day- and night-time temperatures – typical of the area – accompanied us for the rest of the harvest. IL COMMENTO DELL’ENOLOGO La 2020... una bella annata: bianchi di ottima freschezza e sapidità, corposi con ottima persistenza, rosati fragranti e rossi di buona struttura, ricchi di tannini eleganti. 2020... a fine vintage: whites with excellent freshness and flavour, full-bodied and with excellent persistence, fragrant rosés and reds with substantial structure, rich in elegant tannins. COMMENT BY THE WINEMAKER LORENZO FORTINI Enologo | Winemaker A fine fermentazione possiamo considerare la 2020 una bella annata, con bianchi di grande freschezza e sapidità ma allo stesso tempo corposi e con ottima persistenza, rosati fragranti e profumati e rossi di buona struttura, ricchi di tannini eleganti. Particolarmente strutturati i Merlot e i Cabernet dei vigneti SOPRASTRADA, quelli che si inerpicano verso la collina di Bolgheri, vocati ad una produzione di altissima qualità. Now we have reached the end of fermentation, we can consider 2020 a very fine vintage, whites with excellent freshness and flavour, full-bodied and with excellent persistence, fragrant rosés and reds with substantial structure, rich in elegant tannins. The Merlots and Cabernets from the SOPRASTRADA vineyards, those that extend up towards the hill of Bolgheri, are highly structured and suited to produce particularly high quality wines.

COMMENT BY THE AGRONOMIST FRANCO DAL COLLE Agronomo | Agronomist Le prime considerazioni di questo mio commento non possono che essere parole di elogio per tutti i collaboratori di Poggio al Tesoro che, in un momento di estrema difficoltà, hanno dimostrato responsabilità e attaccamento verso l’azienda, ponendo sempre come obiettivo primario quello di portare a termine e nel migliore dei modi una lunga stagione agraria. Così è successo, siamo riusciti nell’intento, consegnando alla cantina uve sane ed integre, di estrema qualità. Ogni anno, visto il cambiamento climatico in continua evoluzione, è d’obbligo adattarsi a nuove realtà stagionali. Continue piogge, lunghi periodi di siccità, hanno portato ad uno sfasamento dei normali processi lavorativi con ricorrenti variazioni di programma. Normalmente le lavorazioni e semine dei sovesci vengono effettuate nel mese di ottobre, quest’anno però a causa delle continue piogge di novembre e dicembre abbiamo deciso di posticipare queste attività nel mese di gennaio, adattandoci ai cambiamenti climatici e metereologici della stagione. Le potature sono state eseguite sempre con il metodo del rispetto dei flussi linfatici, viti impostate con questa tecnica già da diversi anni. Le successive fasi fenologiche di sviluppo (germogliamento, fioritura, allegagione e invaiatura) hanno avuto un andamento costante ed equilibrato, che nel complesso ha portato l’uva ad una buona ed omogenea maturazione. Per quanto riguarda il clima, le temperature estive non sono andate oltre i 31/33 gradi, accompagnate da venti di maestrale molto freschi e piogge da 20-30 mm arrivate al momento ottimale. Le maturazioni delle varietà precoci quali Syrah, Merlot e Vermentino, si sono dimostrate idonee alla produzione di grandi vini. Cabernet Franc e Cabernet Sauvignon hanno avuto un’invaiatura ritardata, che successivamente è accelerata, rientrando così nella normalità della maturazione fenolica. Il nostro proseguo nel Bio ha permesso anche quest’anno di non usare prodotti di sintesi. Inoltre siamo riusciti ad abbassare di molto i quantitativi di rame e zolfo usando trattamenti innovativi, tramite induttori di resistenza, che stimolano la vite ad autodifendersi dalle malattie. Tutto questo perché il nostro obiettivo è quello di alzare sempre di più la qualità dei nostri vini nel rispetto più assoluto verso questo territorio di Bolgheri, unico per la sua bellezza e integrità e le persone che in esso operano. As for the climate, temperatures in summer did not exceed 31-33°C, accompanied by very cool mistral winds and 20-30 mm of rainfall, which arrived with perfect timing. The ripening of early varieties such as Syrah, Merlot and Vermentino has proven suitable for the production of fine wines. Cabernet Franc and Cabernet Sauvignon experienced delayed veraison, which subsequently accelerated, thereby achieving normal phenolic ripening. Our on-going organic practices have enabled us to avoid using synthetic products this year, too. Additionally, we have managed to significantly lower the quantities of copper and sulphur by using innovative treatments, via resistance inducers, which stimulate the vine to defend itself from disease. This is all done because our goal is to increasingly raise the quality of our wines whilst maintaining absolute respect for the area of Bolgheri, which is unique for its beauty, integrity, and for the people who work in it. My first considerations can only be words of praise for all of Poggio al Tesoro’s collaborators who, at an extremely difficult time, have shown responsibility and loyalty to the company, always keeping in mind the main aim of bringing a long agricultural season to an end and in the best way possible. And this is exactly what has happened: we have succeeded in our goal of delivering healthy, intact and extremely high-quality grapes to the winery. Every year, given the ever-evolving situation of climate change, it is crucial that we adapt to new seasonal conditions. Continuous rainfall and long periods of drought have led to time shifts in normal work processes with recurrent changes in planning. Normally the tilling and sowing of green manure is carried out in October but in this vintage, due to continuous rainfall in November and December, we decided to postpone these activities to January, adapting to the season’s climatic and meteorological changes. Pruning was always performed with the method of respecting sap circulation; our vines have been pruned using this technique for several years. The subsequent phenological stages of development (budding, flowering, fruit set and veraison) occurred continuously and in a uniform way leading overall, to grapes with good, uniform ripeness. Our goal: to raise the quality of our wines whilst respecting the territory of Bolgheri.

Il momento più entusiasmante per chi lavora in una cantina è senza dubbio l’inizio della vendemmia. L’impegno e la dedizione che emergono in questo momento cruciale dell’anno, fanno vivere a tutti noi di Poggio al Tesoro un particolare senso di aggregazione che, misto ad una buona dose di passione, ci fa lavorare come una squadra coesa e compatta. È stato un anno duro, siamo stati travolti da un periodo difficile, ma la bellezza e la straordinarietà della natura ci insegnano che la rinascita è possibile. Il nostro vino nasce dal lavoro svolto con attenzione e meticolosità senza mai esimersi dall’ascoltare le esigenze dei vigneti. Il nostro compito, oggi più che mai, è quello di assecondare la natura, individuando i migliori interventi da fare, guidati da un forte senso di responsabilità che ci spinge a fare scelte eticamente corrette a favore del territorio. Everything is ready for a big, new start. The most exciting moment for those who work in a winery is undoubtedly the beginning of the harvest. The commitment and dedication that emerge at this crucial time of the year give all of us at Poggio al Tesoro a special sense of coming together which, mixed with a healthy dose of impassioned enthusiasm, helps us work as a tight-knit, united team. It has been a hard year and we have been sorely tried by a difficult period, but the beauty and extraordinariness of nature teaches us that rebirth really is possible. Our wine comes from work carried out with care and meticulousness, never ceasing to listen to the needs of the vineyards. Our task, today more than ever, is to support nature, identifying the best possible practices, guided by a strong sense of responsibility that spurs us to make ethically correct choices that benefit the environment.

Il primo giorno siamo sempre molto tesi, aspettiamo con ansia le prime indicazioni di Franco Dal Colle, il responsabile dei vigneti di Poggio al Tesoro. È proprio lui a consegnare ad ognuno di noi le nuove magliette di questa vendemmia 2020 e le lucine da fronte, strumenti indispensabili per poter illuminare i grappoli e per poter comunicare tra di noi, in lontananza, con segnali luminosi. In questo primo passaggio ci stiamo concentrando sulla selezione del Vermentino per il Solosole. È molto importante che i grappoli, turgidi e ambrati al momento della raccolta, arrivino in cantina senza subire alcuno stress. Avendo cura di mantenerli al fresco della mattina, possiamo salvaguardare i precursori aromatici, elementi fondamentali per raggiungere l’eleganza tipica del nostro Vermentino. Vitigno a bacca bianca semi-aromatico. A Poggio al Tesoro il Vermentino, varietà mediterranea caratterizzata da profonde differenze a seconda dei cloni da cui proviene, produce uve che si distinguono per l’intenso patrimonio aromatico. Marilisa Allegrini, quando ha deciso di puntare su questa varietà, non ha avuto dubbi: voleva un vino ricco, intenso, di grande personalità. Da questa idea è nata la scelta di indirizzarsi verso cloni di origine corsa, in grado di donare vini che esprimono una grande freschezza iniziale, per poi evolvere in una sorprendente complessità nella fase matura. Solosole, il Vermentino di Poggio al Tesoro, è un vino dal bouquet molto intenso a base di agrumi, fiori bianchi, frutta gialla non troppo matura, erbe aromatiche come timo e salvia, con una spiccata sapidità che ricorda il mare. Un vino bianco sorprendentemente longevo. This is a semi-aromatic white grape variety. At Poggio al Tesoro, Vermentino, a Mediterranean variety that exhibits marked differences according to its originating clones, produces grapes that stand out for their intense aromatic properties. When she decided to focus on this variety, Marilisa Allegrini had no doubts: she wanted a rich, intense wine with great personality. This idea gave rise to the decision to move towards clones of Corsican origin that are can yield wines that express great initial crisp freshness and then evolve into surprising complexity in the mature phase. Solosole, the Vermentino produced by Poggio al Tesoro, is a wine with a very intense bouquet revolving around citrus fruits, white flowers, not overly-ripe yellow fruit, aromatic herbs such as thyme and sage, and a marked flavour reminiscent of the sea. A surprisingly longlived white wine. We start, as in every harvest, with the harvesting of Vermentino at night. The first day we are always very tense and we look forward to the initial guidance given to us by Franco Dal Colle, the manager of Poggio al Tesoro’s vineyards. He gives each of us the new 2020 harvest t-shirts and also our head torches; these are crucial, enabling us to light up and see the bunches and communicate with each other, in the distance, with light signals. During this first step, we are focusing on the selection of Vermentino for Solosole. It is very important that the bunches, turgid and amber in colour by harvest, arrive at the winery stress-free. By taking care to keep them cool in the morning, we can safeguard their aromatic precursors, which are fundamental in achieving the typical elegance of our Vermentino. Dobbiamo individuare con precisione il momento della raccolta: anche solo un paio di giorni, infatti, possono fare una grande differenza. Non dobbiamo permetterci di compromettere il lavoro di un intero anno. Con lo scopo di prelevare alcuni grappoli da portare in laboratorio Lorenzo Fortini è passato dai vigneti che si affacciano sulla Via Bolgherese, quelli SOPRASTRADA i cui terreni contengono preziose argille ricche di fossili e conchiglie. Non c’è analisi che, tuttavia, possa prescindere dall’assaggio del chicco, indicatore fondamentale con cui l’enologo, basandosi sulla sua esperienza, capisce se possiamo procedere con la vendemmia. Lorenzo e Franco si soffermano in vigna per qualche minuto, guardano i diversi filari, osservando e discutendo sull’omogeneità della maturazione nei nostri vigneti: sembrano soddisfatti, le premesse sono buone. Il Merlot che proviene dalla zona della Chiesina di San Giuseppe, promette molto bene. Lorenzo vuole esplorare la possibilità di vinificarlo in purezza e gli assaggi, già in queste prime fasi, sono decisamente incoraggianti. The sampling is constant and monitoring becomes more and more frequent and meticulous. We have to identify the exact time for harvesting: even just a couple of days can make a big difference. We must not allow ourselves to compromise an entire year’s work. Lorenzo Fortini has passed through the vineyards that overlook Via Bolgherese, known as SOPRASTRADA – whose soils contain precious clays rich in fossils and shells – with the aim of picking some bunches to take to the laboratory. There is no analysis, however, that can disregard the berry tasting test, a fundamental indicator which the winemaker, based on his experience, uses to understands if we can proceed with the harvest. Lorenzo and Franco stand in the vineyard for a few minutes and look at the different rows, observing and discussing the uniform nature of the ripening in our vineyards: they seem satisfied, the conditions are good. The Merlot from the Chiesina di San Giuseppe area promises well. Lorenzo wants to explore the possibility of a separate vinification and the tastings, even at these early stages, are definitely encouraging. SETTEMBRE | SEPTEMBER OGGI MERLOT! MERLOT TODAY! Le uve sono belle e sane, produrranno un vino opulento, intenso, dotato di grande carattere ed eleganza. Stiamo gestendo questo vigneto in maniera mirata per le esigenze specifiche della varietà Merlot: abbiamo già da qualche anno iniziato a fare prove di vinificazione in purezza. Siamo sicuri che ci sono le potenzialità di fare un grande monovarietale. A Poggio al Tesoro il Merlot è stato impiantato sia nella nella zona della Chiesina di San Giuseppe, lungo la via Bolgherese, sia nel vigneto Le Sondraie, in cui è presente una subzona ricca di argilla e povera di sabbie. È una varietà che predilige i terreni argillosi, da cui si ottengono vini potenti, concentrati, con intense strutture tanniche e, nel contempo, molto fruttati e seducenti. The grapes are lovely and healthy and will produce an opulent, intense wine with great character and elegance. We are managing this vineyard in a targeted manner for the specific needs of the Merlot variety: for some years now, we have begun carrying out separate vinification trials. We are sure that the potential exists to make a great single-varietal wine. This varietal prefers clayey soils, producing powerful, concentrated wines with intense tannic structures that are, however, still very fruity and seductive. At Poggio al Tesoro, the Merlot was planted both in the area of Chiesina di San Giuseppe, along Via Bolgherese, and in the Le Sondraie vineyard, where there is a sub-area rich in clay and poor in silt. Poggio al Tesoro Poggio al Tesoro Diario della Vendemmia / Harvest Diary / 2020 Diario della Vendemmia / Harvest Diary / 2020 16 17 Abbiamo deciso di effettuare un primo passaggio sul Petit Manseng de Le Sondraie. Un momento particolarmente emozionante per noi di Poggio al Tesoro: questa è l’ultima varietà che ha arricchito il patrimonio ampelografico dell’azienda, ci sta riservando belle sorprese. Il Petit Manseng, oltre ad essere vinificato in purezza nel Teos, viene utilizzato per il 30% nel blend del Pagus Camilla. Quest’anno le uve hanno preso una leggera gelata che ha provocato un calo di produzione. Nonostante le preoccupazioni iniziali, le prove effettuate sugli acini hanno rivelato un’ottima qualità, a dimostrazione del fatto che le viti non hanno subito uno stress eccessivo. Per la produzione del Pagus Camilla, uno dei nostri preziosi gioielli, si effettua una macerazione sulle bucce per 4 giorni. L’attività di monitoraggio è molto intensa: ogni 2/3 ore, Lorenzo assaggia le bucce per poter prendere le decisioni sui tempi di svinatura. La macerazione è di tipo fermentativo, con qualche giorno di cappello prima del trasferimento in anfora per la fermentazione in bianco. We decided to carry out an initial harvesting of the Petit Manseng at Le Sondraie. This is a particularly exciting moment for us at Poggio al Tesoro: the most recent varietal to enriched the company’s ampelographic portfolio, this is a new entry that we are sure holds many surprises in store for the future. The Petit Manseng, in addition to being vinified on its own to produce Teos, is used 30% in the blend of Pagus Camilla. This year the grapes suffered a slight frost which caused a drop in production. Despite initial concerns, the tests carried out on the berries revealed excellent quality, demonstrating the fact that the vines have not undergone any undue stress. Acini piccoli e biondi, zeppi di zuccheri ma anche di acidità, che regalano vini secchi e dolci di eccellente qualità. During contact with the skins, we are interested in enhancing the intact and healthy fruit in all its peculiarities. We don’t want to risk over-extraction, however, quite the opposite: it is important to maintain the freshness and spiciness typical of this variety. For some years we have been using kaolin, a natural clay that prevents the leaf from overheating in the final phase of ripening without affecting photosynthesis. Il Syrah è un vitigno precoce che, per esprimersi al meglio, deve essere piantato in terreni di medio impasto, ricchi di limo e ben drenati. È considerata un’uva rossa nobile per la sua longevità, ma anche per il bouquet fine ed elegante, oltre che per una buona struttura. A Bolgheri questa interessante varietà permette di ottenere vini caratterizzati da un frutto intenso, speziato e di buona bevibilità ed equilibrio. It is considered a noble red grape due to its longevity, but also because of its fine, elegant bouquet and substantial structure. Ogni angolo dei vigneti, viene monitorato in maniera costante in tutte le fasi, dal post-invaiatura fino alla raccolta. Ci sono alcuni elementi che indicano l’eventuale presenza di malattie, funghi, insetti e potenziali criticità idriche. Uno degli indicatori più utili sono gli agresti tra i filari. Gli agresti (o uva di San Martino) sono dei grappoli che rimangono piccoli e verdi, una seconda fioritura che si sviluppa nel corso dello stesso anno vegetativo. Questi grappolini, al momento della vendemmia, si presentano molto acidi e poco zuccherini e per questo motivo vengono lasciati sulla vite. Se fino a qualche anno fa si pensava di doverli asportare, oggi è dimostrato che queste “femminelle” sono una risorsa utile. Le sostanze da loro fotosintetizzate, infatti, vengono trasferite ai tralci ed ai grappoli “buoni”. Oltre a ciò, gli agresti sono ottimi indicatori nella lotta contro l’oidio, malattia che attacca le parti verdi della pianta. Proprio per questo motivo, dopo la fase dell’invaiatura, il grappolo non è più colpito da questa malattia. Foglie ed agresti, al contrario, ne possono essere sempre soggette: il loro monitoraggio, anno dopo anno, rappresenta un indicatore prezioso per la gestione green del vigneto. Le pareti fogliari sono la cartina tornasole dello stato di benessere della pianta. Nei nostri vigneti sono uniformi ed omogenee, di un bel verde intenso e lucido ed indicano assenza di stress. Per contrastare la tignoletta, uno dei principali nemici della vite, monitoriamo gli acini più volte in vigna. Niccolò sta facendo un primo passaggio: preleva dei grappoli a campione per verificare eventuale presenza di uova di tignoletta, se sono mature e se sono state parassitizzate. Calcola la percentuale di probabilità di attacco e decide se intervenire. I grappoli quest’anno non presentano nessuna anomalia, ma uno stagista chiede come avremmo agito in caso contrario. Per rispondere alla sua domanda, Franco spiega che avremmo utilizzato un insetto, il trichogramma della famiglia degli imenotteri. Questa piccolissima vespa depone le sue uova all’interno di quelle della tignoletta e, parassitizzandole, la soffoca. In alternativa, possiamo utilizzare un bacillo (Bacillus Thuringiensis) che viene ingerito dalla larva e provoca tossine che la rende inerte. È evidente che queste tecniche hanno come principale obiettivo quello di riportare la vita nei vigneti, microsistemi in grado di far convivere insetti utili, piante e sostanze organiche. Un contesto perfetto per la vite contribuisce in modo determinante alla qualità delle uve e quindi del vino. The leaf canopy is the litmus test of the vine’s well-being. In our vineyards, they are uniform and a beautiful, intense and glossy green, indicating the absence of stress. To combat the vine moth, one of the vine’s main enemies, we monitor the grapes in the vineyard several times over. Niccolò is making an initial round: he takes sample clusters to check for the presence of moth eggs, to see if they are ripe and if they have been parasitized. He calculates the percentage probability of an attack and decides whether to intervene. This year the grapes show no signs of any anomalies, but an intern asks how we would have acted otherwise. They provide the interns with explanations on the latest trials used in agriculture against harmful vine insects such as, for example, lobesia botrana and cyptoblates. Every part of the vineyards is constantly monitored throughout all its phases, from postveraison to harvest. There are some signs that suggest the presence of diseases, fungi, insects and potential water problems. One of the most useful indicators is under-developed clusters. These are called, locally, ‘San Martino grapes’: clusters that remain small and green, second flowerings that develop during the same vegetative year. At harvest time, they are very acidic and low in sugar and are therefore left on the vine. Removed until recent years, it has now been shown that these growths are a useful resource for the vine. The substances they photosynthesize, in fact, are transferred to the ‘viable’ shoots and bunches. In addition, these unviable clusters are excellent indicators in the fight against powdery mildew, a disease that attacks the vine’s green parts. The viable bunches are thus no longer affected by this disease after veraison. The leaves and the unviable clusters, on the other hand, can still be subject to disease: their monitoring, year after year, is a precious resource for canopy management in the vineyard. A TUTTO BIO! La maturazione dell’acino riguarda la crescita della bacca, la variazione della sua consistenza meccanica, che da rigida e fragile diventa elastica e morbida. L’accumulo di zuccheri semplici, la diminuzione dell’acidità e l’incremento del pH. Si tratta di un’analisi fondamentale che, se ben svolta, permette di raggiungere grandi risultati grazie all’equilibrio delle sostanze contenute negli acini. Franco insiste sempre con la squadra di vendemmia affinché prestino massima attenzione nel riporre delicatamente i grappoli nelle cassette, accompagnandoli con cura, “Sì, proprio come fossero bambini” dice lui. Mantenere la sanità del grappolo in questa fase vendemmiale, infatti, è decisivo: non possiamo in alcun modo rischiare di danneggiare il lavoro di un intero anno. Ecco perché i contenitori che usiamo hanno una capacità davvero ridotta, massimo 5 Kg, per evitare di comprimere eccessivamente i grappoli. The ripening of the grape concerns the growth of the berry, the variation in its material consistency (which changes from rigid and fragile to increasingly elastic and soft), the accumulation of simple sugars, the decrease in acidity and the increase in pH. This is a fundamental analysis which, if well done, leads to great results thanks to the balance of substances contained in the berries. Franco always insists that the harvest team pays the utmost attention to delicately placing the grapes in the crates, cradling them carefully, “Yes, just as if they were infants” he says. Indeed, safeguarding the health of the bunch in this phase of the harvest is decisive: we must in no way risk damaging the work undertaken throughout the entire year. This is why the containers we use have a very small capacity, a maximum 5 kg, to avoid excessively compressing the bunches. Gli orci, prodotti a mano in Toscana dall’azienda Manetti, presentano una maggiore porosità, ottenuta grazie al controllo della temperatura in fase di cottura. Le anfore, prodotte in Trentino dall’azienda Tava, presentano invece una minore porosità. È proprio questa caratteristica che consente una differente ossigenazione del vino. L’ampolla posta al vertice delle anfore permette di isolare il vino separandolo da qualsiasi contatto con l’ossigeno, oltre a consentire a Lorenzo di controllarne l’evoluzione del colore in maniera non invasiva. Un’attività iniziale per i tirocinanti? La pulizia delle anfore prima dell’inserimento del nuovo mosto. Durante la fermentazione, Lorenzo spiega ai tirocinanti un aspetto tecnico: se in questa fase la temperatura all’interno di anfore e orci dovesse alzarsi più del dovuto, abbiamo la possibilità di intervenire inserendo una tasca refrigerante creata su misura per questi vasi vinari. Il Consorzio di Bolgheri, da qualche tempo a questa parte, ha cominciato a valutare se esista uno stile bolgherese, filo conduttore tra tutti i bianchi della zona ed espressione dell’alto livello qualitativo che caratterizza la DOC Bolgheri Bianco. Come abbiamo raccontato prima, una piccola parte di Petit Manseng viene destinata al processo di appassimento per produrre il Teos. Vino complesso e deciso, con intensi sentori di miele, mandorle e lievi note di cioccolato fondente, con il quale si sposa perfettamente. Caldo ed avvolgente, mai stucchevole grazie alla sua elevata acidità. Since vintage 2018, our Pagus Camilla has acquired Bolgheri Bianco DOC denomination. It differs from Solosole Bolgheri Vermentino in several respects: the selection of the best Vermentino grapes from the vineyard overlooking the Fossa Camilla, the particular production process and the strong identifying profile of Petit Manseng which contributes 30% to the blend. For quite some time now, the Bolgheri Consorzio has been evaluating the possibility of a recognisable Bolgheri style, a common thread among all the white wines in the area and an expression of the high quality that can characterize the Bolgheri Bianco DOC. As mentioned earlier, a small percentage of Petit Manseng is set aside for the drying process (appassimento) to produce Teos. A complex, bold wine, it reveals intense hints of honey, almonds and light notes of dark chocolate, with which it pairs perfectly. It is warm and enveloping but never cloying thanks to its marked acidity. LE ANFORE THE AMPHORAE

Oggi ci troviamo nel vigneto di Valle di Cerbaia a raccogliere le uve di Viognier. Nonostante la breve gelata subita dalle uve in questo angolo della tenuta, fortunatamente i grappoli non ne hanno risentito, si presentano belli ed allungati. In questa fase è davvero molto importante tenere sotto controllo ogni parametro: ieri è stato monitorato il pH con i controlli standard di acidità totale, oggi facciamo un’ultima analisi del grado zuccherino. Quando il Viognier arriva in cantina, viene misurato il peso medio del grappolo e dell’acino, per avere un controllo sulla produzione e poter avanzare delle stime per gli anni successivi. Questo monitoraggio è molto utile: la dimensione dell’acino è indicativa del contenuto di acqua che dipende dalla varietà e dall’annata. Ad esempio, nell’estate piovosa del 2014 il peso era superiore alla media del 20% circa. A partire dal 2019 abbiamo fatto una piccola produzione di Viognier di cui stiamo monitorando l’evoluzione. For example, in the very wet summer of 2014 the weight was about 20% higher than average. In 2019 we produced a small quantity of Viognier whose evolution we are monitoring. VIOGNIER WORK IN PROGRESS VITIGNO | GRAPEVINE VIGNETO | VINEYARD Viognier Valle di Cerbaia Vitigno bianco aromatico originariamente coltivato solo nella Valle del Rodano settentrionale, dove è stato introdotto nel 200 d.C. dall’imperatore Marco Aurelio Probo. Si adatta bene ai climi caldi, poiché resiste alla siccità; è caratterizzato da scarsa resa per ettaro: proprio per questo motivo, solitamente, viene usato nei blend, raramente in purezza. Il vino che ne deriva è molto particolare, secco e minerale, con profumi di frutta esotica come ananas e mango. Dal colore giallo dorato, si rivela particolarmente sapido, con un finale molto persistente. La foglia piccola è orbicolare e pentalobata. Il grappolo è medio-piccolo, di forma tronco-conica e compatto. L’acino è piccolo, sferoidale od ovale, con buccia spessa e di colore giallo ambrato.
