During contact with the skins, we are interested in enhancing the intact and healthy fruit in all its peculiarities. We don’t want to risk over-extraction, however, quite the opposite: it is important to maintain the freshness and spiciness typical of this variety. For some years we have been using kaolin, a natural clay that prevents the leaf from overheating in the final phase of ripening without affecting photosynthesis. Il 26 agosto abbiamo iniziato a vendemmiare il Syrah; è arrivato a maturazione precocemente ed abbiamo dovuto procedere celermente. Durante il contatto con le bucce, ci poniamo l’obiettivo di far esaltare il frutto, integro e sano, in ogni sua peculiarità. Non vogliamo rischiare una sovraestrazione, al contrario è importante che mantenga la freschezza e la speziatura tipica di questa varietà. Da qualche anno abbiamo iniziato ad utilizzare il caolino. Questa argilla naturale evita il surriscaldamento della foglia nella fase finale di maturazione senza incidere sulla fotosintesi. Il Syrah è un vitigno precoce che, per esprimersi al meglio, deve essere piantato in terreni di medio impasto, ricchi di limo e ben drenati. È considerata un’uva rossa nobile per la sua longevità, ma anche per il bouquet fine ed elegante, oltre che per una buona struttura. A Bolgheri questa interessante varietà permette di ottenere vini caratterizzati da un frutto intenso, speziato e di buona bevibilità ed equilibrio. Syrah is an early vine which, to express its potential to the best, has to be planted in medium-textured soils that are rich in silt and well drained. It is considered a noble red grape due to its longevity, but also because of its fine, elegant bouquet and substantial structure. In Bolgheri, this interesting varietal allows us to obtain wines that are typically intensely fruity, spicy and well-balanced.
