DIARIO DELLA VENDEMMIA HARVEST DIARY 2019 52 53 FOCUS Sovescio Sono ormai oltre 10 anni che a Poggio al Tesoro utilizziamo il sovescio come tecnica imprescindibile nella nostra gestione del vigneto, linea guida di una filosofia produttiva che vuole essere sempre più rispettosa dell’ambiente. Il sovescio è una pratica agronomica che consiste nel seminare apposite essenze tra i filari di vigne. Usata nell’agricoltura biologica, questa tecnica permette di apportare sostanza organica al terreno e, nel contempo, una riduzione dell’utilizzo di prodotti chimici. A Bolgheri il sovescio non era particolarmente conosciuto e chi decideva di utilizzarlo nei propri vigneti, usava quasi esclusivamente favino. A Poggio al Tesoro, invece, ogni anno cerchiamo di affinare le nostre conoscenze, identificando il giusto mix varietale per ogni singolo appezzamento. Il composto di semina per il sovescio viene scelto in base a molte variabili: le componenti del suolo, lo stato dell’apparato radicale delle piante, le condizioni della vite. Se è molto vigorosa, dovremo impoverire il terreno; se, al contrario, mostra segni di debolezza, dovrà essere nutrito adeguatamente per poter produrre il meglio. Le leguminose vengono utilizzate in quegli appezzamenti che si caratterizzano per scarsa vigoria perchè arricchiscono il terreno di azoto attraverso una particolare simbiosi radicale con batteri azotofissatori. Questi batteri, chiamati rizobi, fissano l’azoto atmosferico e lo trasferiscono nel terreno rendendolo così disponibile anche per le viti. Le graminacee (principalmente orzo, segale) hanno un apparato radicale fascicolato che si sviluppa nei primi centimetri di suolo. Il loro ruolo è quello di impoverire i terreni troppo vigorosi. Le brassicacee, essendo dotate di apparato radicale fittonante, permettono di estrarre nutrienti difficilmente accessibili (es. fosforo) e nello stesso tempo riducono il compattamento del suolo. L’obiettivo che si vuole raggiungere con l’utilizzo di queste specifiche essenze è quello di aumentare la capacità drenante del terreno e ciò avviene proprio perchè le radici ne rompono la superficie. Quando lo strato superficiale è più “sciolto”, l’acqua penetra in profondità, creando un ambiente ipogeo maggiormente adatto all’attività radicale. La vite diventa così resistente agli stress idrici e le uve si caratterizzano per un’intensa aromaticità. Gli effetti benefici del sovescio si amplificano ulteriormente nel momento in cui l’inerbimento viene falciato perché si genera una pacciamatura naturale che riduce l’evaporazione di acqua dal suolo nei mesi più caldi e protegge il terreno dal passaggio dei trattori, limitando notevolmente il calpestamento. Nel contempo viene favorito lo sviluppo di biodiversità, concetto al quale Poggio al Tesoro tiene moltissimo! In poco tempo sviluppa una massa vegetale importante che ci permette di effettuare delle ricche pacciamature. it shows signs of weakness, we have to adequately nourish it in order to produce the best possible grapes. Pulses are used in plots characterized by poor vigour because they enrich the soil with nitrogen via a particular radical symbiosis with nitrogen-fixing bacteria. This genus of bacteria, called rhizobium, fixes atmospheric nitrogen and transfers it to the soil, thereby also making it available to the vines. Cereal grains (mainly barley and rye) have a bundled root system that develops in the first few centimetres of the soil. Their role is to impoverish overly-vigorous soils. Brassicaceae (commonly known as mustards), being equipped with a taproot system, allow for the extraction of nutrients that are difficult to access (e.g. phosphorus) and at the same time reduce soil compaction. The desired objective in using these specific cover crops is to increase the soil’s drainage capacity and this happens precisely because the roots break up the soil’s surface. When the surface layer is ‘looser’, the water penetrates more deeply, creating an underground environment that is better suited to the vine’s root requirements. It thereby becomes resistant to water shortages and the grapes take on an intense aromatic quality. The beneficial effects of green manure are further amplified when the grass is mowed because natural mulch is generated. This reduces the evaporation of water from the soil in thewarmer months and protects the soil from the passage of tractors, considerably reducing trampling. At the same time, green manure fosters the development of biodiversity, a concept that is very dear to Poggio al Tesoro! NEWS > This year we tried sowing buckwheat, producing results that deserve consideration! This is a spring grain with a brief life cycle of about two months. In a short time it develops an important mass that allows us to produce rich mulches. Greenmanure is an agronomic practice which consists of sowing special cover crops between the vine rows. Used in organic farming, this techniquemakes it possible to introduce organic matter into the soil and, at the same time, reduce the use of chemical products. In Bolgheri, the practice of green manuring was not particularly well known and those who decided to use it in their vineyards almost exclusively used field beans. At Poggio al Tesoro, on the other hand, we try to hone our knowledge, identifying the rightmixof varietals for each individual plot. The sowing mix for green manure is chosen on the basis of numerous variables: the components of the soil, the state of the plant root system and the conditions of the vine.
